Thai Peanut Tofu Edamame Noodle Jars




Ingredients
- 8 ounces rice noodles
- 14 ounces extra-firm tofu, pressed and cubed
- 1 cup shelled edamame
- 2 cups cucumber, sliced
- 2 cups shredded carrots
- 2 cups shredded purple cabbage
- 1/2 cup peanut sauce
- 2 limes, juiced
- 1/3 cup chopped cilantro
- 1 tablespoon sesame seeds
- Optional: 1 teaspoon chili crisp
Method
- Cook rice noodles, rinse with cool water, and drain well.
- Cube the tofu and pat it dry.
- Stir peanut sauce with lime juice.
- Layer sauce, tofu, edamame, noodles, cucumber, carrots, and cabbage into four jars.
- Chill until ready to serve; shake or toss before eating.
