Thai Peanut Tofu Edamame Noodle Jars

Ingredients

  • 8 ounces rice noodles
  • 14 ounces extra-firm tofu, pressed and cubed
  • 1 cup shelled edamame
  • 2 cups cucumber, sliced
  • 2 cups shredded carrots
  • 2 cups shredded purple cabbage
  • 1/2 cup peanut sauce
  • 2 limes, juiced
  • 1/3 cup chopped cilantro
  • 1 tablespoon sesame seeds
  • Optional: 1 teaspoon chili crisp

Method

  1. Cook rice noodles, rinse with cool water, and drain well.
  2. Cube the tofu and pat it dry.
  3. Stir peanut sauce with lime juice.
  4. Layer sauce, tofu, edamame, noodles, cucumber, carrots, and cabbage into four jars.
  5. Chill until ready to serve; shake or toss before eating.
