Hot-Honey Salmon Sweet Potato Sheet-Pan Plates




Ingredients
- 4 salmon fillets, 5 oz each
- 2 medium sweet potatoes, cut into 1/2-inch wedges
- 12 oz trimmed green beans
- 1 small red onion, sliced
- 2 tbsp olive oil, divided
- 1 tbsp hot honey
- 1 tbsp low-sodium soy sauce
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 cup plain Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp chopped dill or parsley
- Optional: lemon wedges and sesame seeds
Method
- Heat oven to 425 F and line a sheet pan.
- Toss sweet potatoes and onion with 1 tbsp olive oil, smoked paprika, salt, and pepper. Roast for 15 minutes.
- Stir green beans with 1 tsp olive oil and add to the pan.
- Whisk hot honey, soy sauce, Dijon, garlic powder, and remaining olive oil. Brush over salmon.
- Add salmon to the pan and roast 10-12 minutes, until it flakes easily.
- Stir yogurt, lemon juice, and herbs. Serve each plate with salmon, vegetables, and yogurt drizzle.
